Apples Savoury Pie

Recipe suggested by the restaurant Le Métropole

Ingredients (for 12 people):

- 600 gr of pure butter puff pastry
- 1 egg yolk
- 100 gr of butter
- 300 gr of caster sugar
- 2 kg golden apples
- Vanilla
- Cinnamon

PREPARATION:

Peel the apples. Cut into regular pieces (about 1 cm cubes).

In a skillet, melt the butter and add the diced apples and sugar.
Halfway through, add the cinnamon and vanilla extract.
Caramelize slightly, then cool completely.

Spread the puff pastry into a rectangle (50/70). Place directly on the baking sheet. Using a fork, prick the dough.
Break the egg yolk, diluting with a little water. Using a brush, depositing this mixture on the periphery of the dough (relating to half an inch).

Spread the apples on the first half of the dough, folding the second half of the first and strongly support (either with the fingers or with a fork) to be employed for sealing the pulp.

Place the egg yolk over the pie before baking in an oven at 180 ° for 45 minutes.

The pie should be served tepid sprinkled with icing sugar
