The Sarrous Soup

The sarrous is spinach that grows wild near the shepherds' huts that are no longer used (it is softer spring).

Ingredients (for 4 people):


- 2 pork rinds
- A piece of lamb neck (if sheep)
- A good piece of ham heel
- Sarrous
- White beans
- Carrots and potatoes, peeled and cut into quarters
- 1 onion
- You can add a sausage and / or a bit of duck confit

PREPARATION:

The day before:
Soak dry beans in water

The same day:
Cook the beans in unsalted water slowly.

Blanch the rind and cook them in water with beans, carrots and onion for about an hour.

Blanch sarrous and cook them with the rest, adding also the lamb neck, the heel of ham and cook for an hour.

Add the potatoes to cook for another 30 minutes
