Recipe suggested by Stephane Garelli of the Chalet des Gourmands

Preparation time: 20 min.
Cooking time: 60 min.

Ingredients (for 4 people):
- 1 Bethmale (cheese originating in the Ariège Pyrenees)
- 750 g potato gratin
- 1 onion
- 200 g bacon
- Salt and pepper
- Thyme (optional)

PREPARATION:

Cook the potatoes in a large pot of salted water (medium doneness 20-30 minutes). Let them cool slightly then peel and cut into cubes.

Set your oven to preheat to 180 ° C.

Fry in a pan over low heat bacon and onion. Add the potatoes to the pan and let it come back a few minutes.

Season to taste with salt and pepper and possibly a little thyme.

Put half the mixture into a dish.

Cut Bethmale 2. Then cut each half in the thickness direction. Place two pieces of cheese on the preparation.

Add the rest of the mixture and add the last 2 pieces Bethmale.

Bake at 180 ° C for 20 to 30 minutes.

Remove your dish from the oven and serve hot.
